For the Crust:
- 2 medium sweet potatoes, peeled and cubed
- 1 can (15 oz) chickpeas, rinsed and drained
- 1/4 cup tahini
- 2 cloves garlic, minced
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese
- 1/4 cup mixed nuts (such as walnuts and almonds), toasted and chopped
- Fresh parsley for garnish
- Pita bread or vegetable sticks for serving
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with 1 tablespoon olive oil, salt, and pepper. Roast for 20-25 minutes until tender and lightly browned.
- In a food processor, combine roasted sweet potatoes, chickpeas, tahini, garlic, remaining olive oil, lemon juice, cumin, salt, and pepper. Blend until smooth and creamy.
- Transfer the hummus to a serving platter, creating a well in the center. Sprinkle with crumbled feta and toasted nuts.
- Garnish with fresh parsley and serve with pita bread or vegetable sticks.
