For the Crust:

  • 2 medium sweet potatoes, peeled and cubed
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1/4 cup mixed nuts (such as walnuts and almonds), toasted and chopped
  • Fresh parsley for garnish
  • Pita bread or vegetable sticks for serving

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with 1 tablespoon olive oil, salt, and pepper. Roast for 20-25 minutes until tender and lightly browned.
  2. In a food processor, combine roasted sweet potatoes, chickpeas, tahini, garlic, remaining olive oil, lemon juice, cumin, salt, and pepper. Blend until smooth and creamy.
  3. Transfer the hummus to a serving platter, creating a well in the center. Sprinkle with crumbled feta and toasted nuts.
  4. Garnish with fresh parsley and serve with pita bread or vegetable sticks.
