A festive and savory-sweet appetizer featuring roasted sweet potato rounds topped with melted brie, tart cranberries, crunchy walnuts, and a spicy honey drizzle.

For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces brie cheese, sliced into small pieces
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts, toasted and roughly chopped
  • 1/4 cup honey
  • 1/2 teaspoon red pepper flakes
  • Fresh thyme leaves for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  3. Remove from oven. Top each round with a piece of brie. Return to oven for 3-5 minutes until brie is melted.
  4. While baking, heat honey and red pepper flakes in a small saucepan over low heat for 2-3 minutes, stirring until warm and infused. Remove from heat.
  5. Arrange sweet potato rounds on a serving platter. Sprinkle with cranberries and walnuts. Drizzle with hot honey. Garnish with thyme if desired. Serve warm.
