A festive and elegant appetizer featuring roasted sweet potato rounds topped with creamy brie, tart cranberry sauce, and crunchy pecans.

For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces brie cheese, rind removed and sliced
  • 1/4 cup cranberry sauce
  • 1/4 cup pecans, chopped
  • 1 tablespoon fresh thyme leaves

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet and roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  3. Top each sweet potato round with a slice of brie. Return to the oven for 3-5 minutes until the brie is melted.
  4. Remove from oven and top each round with a small dollop of cranberry sauce, a sprinkle of chopped pecans, and fresh thyme leaves. Serve warm.
