For the Crust:
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 oz brie cheese, sliced into small pieces
- 1/2 cup cranberry sauce
- 1/4 cup chopped pecans
- 1 tbsp fresh thyme leaves
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet.
- Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
- Top each round with a slice of brie and return to the oven for 3-5 minutes until cheese is melted.
- Remove from oven and top with cranberry sauce, pecans, and a sprinkle of fresh thyme. Serve warm.
