For the Crust:
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces brie cheese, rind removed and sliced
- 1/2 cup cranberry sauce
- 1/4 cup chopped pecans
- 1 tablespoon fresh thyme leaves
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet and roast for 20 minutes, flipping halfway through.
- Top each round with a slice of brie and return to the oven for 5-7 minutes, until cheese is melted.
- Remove from oven and top with a dollop of cranberry sauce, chopped pecans, and a sprinkle of fresh thyme.
- Serve warm and enjoy.
