For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 8 ounces cream cheese, softened
  • 1/2 cup whole-berry cranberry sauce
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped pecans, toasted

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, pepper, and garlic powder. Arrange in a single layer on the baking sheet.
  3. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned. Let cool slightly.
  4. Spread a dollop of softened cream cheese onto each sweet potato round.
  5. Top with a teaspoon of cranberry sauce, then sprinkle with parsley and toasted pecans.
  6. Serve immediately as a warm appetizer.
