A festive and flavorful appetizer featuring roasted sweet potato rounds topped with creamy goat cheese, tart pomegranate arils, crunchy walnuts, and a drizzle of honey.

For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces goat cheese, crumbled
  • 1/2 cup pomegranate arils
  • 1/3 cup walnuts, chopped and toasted
  • 2 tablespoons honey
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  3. Let rounds cool slightly. Top each with crumbled goat cheese, pomegranate arils, and walnuts.
  4. Drizzle with honey and garnish with fresh thyme. Serve warm or at room temperature.
