- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 4 ounces goat cheese, softened
- 2 tablespoons Greek yogurt
- 1 tablespoon honey
- 1/4 cup pomegranate seeds
- 2 tablespoons fresh thyme leaves
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, smoked paprika, salt, and pepper. Arrange in a single layer on the baking sheet and roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
- While potatoes roast, whip goat cheese, Greek yogurt, and honey in a bowl until smooth and fluffy.
- Let sweet potato rounds cool slightly, then top each with a dollop of whipped goat cheese mixture.
- Garnish with pomegranate seeds and fresh thyme leaves before serving.
