For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 4 ounces goat cheese, softened
  • 2 tablespoons Greek yogurt
  • 1 tablespoon honey
  • 1/4 cup pomegranate seeds
  • 2 tablespoons fresh thyme leaves

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, smoked paprika, salt, and pepper. Arrange in a single layer on the baking sheet and roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  3. While potatoes roast, whip goat cheese, Greek yogurt, and honey in a bowl until smooth and fluffy.
  4. Let sweet potato rounds cool slightly, then top each with a dollop of whipped goat cheese mixture.
  5. Garnish with pomegranate seeds and fresh thyme leaves before serving.
