A festive and savory appetizer featuring roasted sweet potato slices topped with creamy goat cheese, tart dried cranberries, and crunchy pecans.

For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces goat cheese, crumbled
  • 1/3 cup dried cranberries
  • 1/3 cup pecans, roughly chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon honey (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato slices with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  3. Remove from oven and let cool slightly. Top each slice with crumbled goat cheese, dried cranberries, and chopped pecans.
  4. Garnish with fresh thyme and drizzle with honey if desired. Serve warm or at room temperature.
