For the Crust:
- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika
- 4 ounces goat cheese, crumbled
- 1/3 cup dried cranberries
- 1/3 cup chopped pecans
- 2 tablespoons fresh thyme leaves
- 1 tablespoon honey for drizzling
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, pepper, and smoked paprika. Arrange in a single layer on the baking sheet and roast for 20-25 minutes until tender and lightly browned.
- Remove from oven and let cool slightly. Top each round with crumbled goat cheese, dried cranberries, and chopped pecans.
- Return to oven for 3-5 minutes to warm the toppings. Garnish with fresh thyme and drizzle with honey before serving.
