For the Crust:
- 4 medium sweet potatoes
- 200g feta cheese, crumbled
- 2 tablespoons olive oil
- Fresh sage leaves
Instructions
1. Prepare the Crust:
- Preheat your oven to 400°F (200°C). Pierce each sweet potato several times with a fork and bake in the oven for 25 minutes.
- After cooling slightly, carefully cut a slit into each sweet potato and fill with crumbled feta cheese. Return to the oven for an additional 5 minutes, allowing the cheese to melt.
- In a small pan, heat olive oil and fry the sage leaves until crispy. Garnish the sweet potatoes with the crispy sage before serving.
