For the Crust:
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 bell peppers (red and green), sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp grated ginger
- 2 tbsp vegetable oil
- 1 tbsp cornstarch mixed with 2 tbsp water
- Cooked rice, for serving
- Sesame seeds and green onions, for garnish
Instructions
1. Prepare the Crust:
- In a small bowl, whisk together soy sauce, honey, rice vinegar, and ginger to make the sauce; set aside.
- Heat oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 6-8 minutes; remove and set aside.
- Add bell peppers and onion to the skillet; stir-fry for 4-5 minutes until slightly tender. Add garlic and cook for 1 minute more.
- Return chicken to the skillet. Pour in the sauce and bring to a simmer. Stir in cornstarch mixture and cook until thickened, about 2 minutes.
- Serve over cooked rice, garnished with sesame seeds and green onions.
