Description

A quick and flavorful stir-fry featuring tender chicken, crisp bell peppers, and a sweet-savory sauce, served over rice for a satisfying meal.

For the Crust:

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 bell peppers (red and green), sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp grated ginger
  • 2 tbsp vegetable oil
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • Cooked rice, for serving
  • Sesame seeds and green onions, for garnish

Instructions

1. Prepare the Crust:

  1. In a small bowl, whisk together soy sauce, honey, rice vinegar, and ginger to make the sauce; set aside.
  2. Heat oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 6-8 minutes; remove and set aside.
  3. Add bell peppers and onion to the skillet; stir-fry for 4-5 minutes until slightly tender. Add garlic and cook for 1 minute more.
  4. Return chicken to the skillet. Pour in the sauce and bring to a simmer. Stir in cornstarch mixture and cook until thickened, about 2 minutes.
  5. Serve over cooked rice, garnished with sesame seeds and green onions.

Notes

You can customize the seasonings to taste.
