For the Crust:
- 1 lb boneless, skinless chicken breast, cubed
- 1 cup jasmine rice, uncooked
- 2 cups water
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 3 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 2 tbsp olive oil
- Salt and pepper to taste
- Green onions, sliced for garnish
Instructions
1. Prepare the Crust:
- Cook the jasmine rice according to package instructions with 2 cups water until fluffy.
- In a bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger to make the sauce.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes.
- Pour the sauce over the chicken, stir to coat, and simmer for 2-3 minutes until slightly thickened.
- In another pan, heat the remaining olive oil. Sauté bell pepper, broccoli, and carrot for 4-5 minutes until tender-crisp.
- Assemble bowls by dividing rice, chicken, and vegetables. Garnish with green onions and serve warm.
