For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/4 cup soy sauce
- 3 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 tablespoons vegetable oil
- Salt and black pepper to taste
- 2 green onions, sliced for garnish
Instructions
1. Prepare the Crust:
- Rinse the rice under cold water until the water runs clear, then combine with chicken broth in a pot. Bring to a boil, reduce heat to low, cover, and simmer for 15-20 minutes until fluffy.
- Season chicken breasts with salt and pepper. Heat oil in a large skillet over medium-high heat and cook chicken for 6-7 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add soy sauce, honey, garlic, and ginger. Stir and simmer for 2-3 minutes until slightly thickened.
- Return chicken to the skillet, turning to coat in the glaze. Cook for another 2 minutes until heated through.
- Serve chicken over fluffy rice, drizzled with extra glaze and garnished with green onions.
