Grilled halloumi skewers with a sweet and savory glaze of spiced honey and fresh citrus zest, perfect as an appetizer or light meal.

For the Crust:
- 8 oz halloumi cheese, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 2 tbsp olive oil
- 2 tbsp honey
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- Zest of 1 lemon
- Zest of 1 orange
- Salt and black pepper to taste
- Wooden or metal skewers
Instructions
1. Prepare the Crust:
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Preheat grill or grill pan to medium-high heat.
- Thread halloumi cubes, bell pepper, and onion alternately onto skewers.
- Brush skewers with olive oil and season lightly with salt and pepper.
- Grill skewers for 3-4 minutes per side, until halloumi is golden and vegetables are charred.
- In a small bowl, mix honey, smoked paprika, and cumin. Brush over skewers during the last minute of grilling.
- Remove skewers from heat, sprinkle with lemon and orange zest, and serve immediately.
