For the Crust:
- 8 large jalapeños, halved lengthwise and seeded
- 4 oz brie cheese, rind removed and cut into small pieces
- 1/4 cup blueberry jam or preserves
- 4 slices bacon, cooked until crisp and crumbled
- 1 tbsp olive oil
- 1/4 tsp smoked paprika
- Salt and black pepper to taste
- Fresh cilantro or parsley for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a small bowl, mix brie pieces and blueberry jam until combined. Spoon the mixture evenly into each jalapeño half.
- Arrange stuffed jalapeños on the baking sheet. Drizzle with olive oil and sprinkle with smoked paprika, salt, and pepper.
- Bake for 18-22 minutes, until jalapeños are tender and brie is melted and bubbly.
- Remove from oven, top with crumbled bacon and garnish with fresh herbs if desired. Serve warm.
