For the Crust:

  • 8 large jalapeños, halved lengthwise and seeded
  • 4 oz brie cheese, rind removed and cut into small pieces
  • 1/4 cup blueberry jam or preserves
  • 4 slices bacon, cooked until crisp and crumbled
  • 1 tbsp olive oil
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix brie pieces and blueberry jam until combined. Spoon the mixture evenly into each jalapeño half.
  3. Arrange stuffed jalapeños on the baking sheet. Drizzle with olive oil and sprinkle with smoked paprika, salt, and pepper.
  4. Bake for 18-22 minutes, until jalapeños are tender and brie is melted and bubbly.
  5. Remove from oven, top with crumbled bacon and garnish with fresh herbs if desired. Serve warm.

You can customize the seasonings to taste.
