Description

A vibrant stir-fry combining tender chicken, sweet pineapple, crisp vegetables, and a spicy-sweet sauce served over fluffy rice.

For the Crust:

  • 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
  • 1 cup fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp sriracha
  • 1 tbsp rice vinegar
  • 2 tbsp vegetable oil
  • 2 cups cooked white rice
  • 2 green onions, sliced for garnish

Instructions

1. Prepare the Crust:

  1. Heat 1 tbsp oil in a large wok or skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 6-8 minutes. Remove and set aside.
  2. Add remaining oil to the skillet. Stir-fry bell peppers and onion for 3-4 minutes until slightly tender. Add garlic and ginger, cook for 1 minute until fragrant.
  3. Return chicken to the skillet. Add pineapple, soy sauce, honey, sriracha, and rice vinegar. Stir to combine and cook for 2-3 minutes until sauce thickens slightly.
  4. Serve stir-fry over cooked rice, garnished with sliced green onions.

Notes

You can customize the seasonings to taste.
