A vibrant stir-fry combining tender chicken, sweet pineapple, crisp vegetables, and a spicy-sweet sauce served over fluffy rice.

For the Crust:
- 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
- 1 cup fresh pineapple chunks
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 3 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp sriracha
- 1 tbsp rice vinegar
- 2 tbsp vegetable oil
- 2 cups cooked white rice
- 2 green onions, sliced for garnish
Instructions
1. Prepare the Crust:
- Heat 1 tbsp oil in a large wok or skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 6-8 minutes. Remove and set aside.
- Add remaining oil to the skillet. Stir-fry bell peppers and onion for 3-4 minutes until slightly tender. Add garlic and ginger, cook for 1 minute until fragrant.
- Return chicken to the skillet. Add pineapple, soy sauce, honey, sriracha, and rice vinegar. Stir to combine and cook for 2-3 minutes until sauce thickens slightly.
- Serve stir-fry over cooked rice, garnished with sliced green onions.
