For the Crust:
- 4 heads endive, halved lengthwise
- 2 tbsp honey
- 1 tsp red pepper flakes
- 1/2 tsp salt
- 2 tbsp olive oil
- 8 oz burrata cheese
- 1/4 cup heavy cream
- 1 tbsp lemon juice
- Black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Arrange endive halves cut-side up on a baking sheet.
- Drizzle endive with honey, olive oil, then sprinkle with red pepper flakes and salt. Roast for 25 minutes until caramelized.
- While endive roasts, whip burrata with heavy cream and lemon juice until light and fluffy. Season with black pepper.
- Spread whipped burrata on serving plates and top with caramelized endive. Drizzle with any remaining pan juices.
