A bold and unexpected dish featuring grilled watermelon steaks with a spicy-sweet glaze, served with a rich blue cheese fondue.

For the Crust:
- 1 large seedless watermelon, cut into 1-inch thick steaks
- 2 tbsp olive oil
- 1 tbsp smoked paprika
- 1 tsp cayenne pepper
- 2 tbsp honey
- 1 tbsp lime juice
- 1 cup crumbled blue cheese
- 1/2 cup heavy cream
- 1 tbsp butter
- 1 clove garlic, minced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- Preheat grill to medium-high heat.
- In a small bowl, mix olive oil, smoked paprika, cayenne, honey, and lime juice to create the swicy glaze.
- Brush both sides of the watermelon steaks with the glaze and grill for 3-4 minutes per side until char marks appear.
- For the fondue, melt butter in a saucepan over medium heat. Add garlic and sauté until fragrant.
- Reduce heat to low, add blue cheese and heavy cream, stirring constantly until smooth and creamy.
- Season with salt and pepper to taste.
- Serve grilled watermelon steaks drizzled with additional glaze and topped with blue cheese fondue. Garnish with fresh cilantro.
