For the Crust:
- 2 large sweet potatoes, peeled and cubed
- 1/4 cup honey
- 1 tsp cinnamon
- 1/2 tsp cayenne pepper
- 1/4 tsp salt
- 1 cup goat cheese
- 2 tbsp heavy cream
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 170°F (75°C). Line a baking sheet with parchment paper.
- Boil sweet potatoes until tender, then blend with honey, cinnamon, cayenne, and salt until smooth.
- Spread the mixture evenly on the prepared baking sheet and bake for 4-6 hours until dry but pliable.
- While the fruit leather cools, whip goat cheese with heavy cream and vanilla until light and fluffy.
- Cut the fruit leather into strips and serve with dollops of whipped goat cheese.
