Taco-Stuffed Sweet Potatoes with Ground Turkey and Feta

Description

A healthy and flavorful twist on taco night, featuring roasted sweet potatoes stuffed with seasoned ground turkey and topped with creamy feta cheese.


Ingredients

For the Crust:

  • 4 medium sweet potatoes
  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F. Pierce sweet potatoes with a fork and bake for 45-50 minutes, or until tender.
  2. While potatoes bake, heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  3. Add ground turkey and garlic to the skillet. Cook until turkey is browned, breaking it up with a spoon.
  4. Stir in taco seasoning and water. Simmer for 5 minutes until thickened.
  5. Slice open baked sweet potatoes and fluff the insides with a fork. Stuff each potato with the turkey mixture.
  6. Top with feta cheese and cilantro. Season with salt and pepper to taste.

Notes

You can customize the seasonings to taste.
