For the Crust:
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 2 cups broccoli florets
- 1 cup sliced mushrooms
- 1 cup cooked white rice
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp minced garlic
- 1 tsp grated ginger
- 1 tbsp vegetable oil
- 2 green onions, sliced
Instructions
1. Prepare the Crust:
- Heat oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes.
- Add broccoli and mushrooms to the skillet. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
- In a small bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger. Pour the sauce over the chicken and vegetables.
- Simmer for 2-3 minutes until the sauce thickens slightly and coats the ingredients.
- Serve the stir-fry over cooked rice, garnished with sliced green onions.
