A quick and flavorful stir-fry featuring tender chicken, crisp broccoli, and earthy mushrooms in a savory teriyaki sauce, served over fluffy rice.

For the Crust:

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 cups broccoli florets
  • 1 cup sliced mushrooms
  • 1 cup cooked white rice
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp minced garlic
  • 1 tsp grated ginger
  • 1 tbsp vegetable oil
  • 2 green onions, sliced

Instructions

1. Prepare the Crust:

  1. Heat oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes.
  2. Add broccoli and mushrooms to the skillet. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
  3. In a small bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger. Pour the sauce over the chicken and vegetables.
  4. Simmer for 2-3 minutes until the sauce thickens slightly and coats the ingredients.
  5. Serve the stir-fry over cooked rice, garnished with sliced green onions.
