For the Crust:
- 2 large cucumbers, thinly sliced
- 1 lb boneless, skinless chicken breasts, grilled and shredded
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup roasted peanuts, crushed
- 2 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp honey
- 1 tsp chili flakes
- 1 clove garlic, minced
Instructions
1. Prepare the Crust:
- Grill the chicken breasts until fully cooked, then shred into bite-sized pieces.
- In a large bowl, combine sliced cucumbers, shredded chicken, red onion, and cilantro.
- In a small bowl, whisk together fish sauce, lime juice, honey, chili flakes, and minced garlic to make the dressing.
- Pour the dressing over the salad and toss gently to coat all ingredients.
- Sprinkle crushed peanuts on top before serving.
