Description

A classic strawberry jam with a surprising twist of fresh basil for a subtle, aromatic depth.

For the Crust:

  • 2 lbs fresh strawberries, hulled and quartered
  • 2 cups granulated sugar
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh basil leaves, finely chopped
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Combine strawberries, sugar, and lemon juice in a large pot. Let sit for 30 minutes to macerate.
  2. Bring the mixture to a boil over medium-high heat, stirring frequently. Reduce heat and simmer for 20-25 minutes until thickened.
  3. Stir in the chopped basil and vanilla extract. Cook for an additional 2 minutes.
  4. Remove from heat and let cool slightly before transferring to sterilized jars. Seal and store in the refrigerator.
