For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup heavy cream
  • Powdered sugar for dusting

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). In a food processor, combine flour, butter, sugar, and salt; pulse until mixture resembles coarse crumbs. Press into tartlet pans and bake for 15 minutes until lightly golden.
  2. In a bowl, whisk eggs and sugar until smooth. Stir in lemon juice, lemon zest, and heavy cream until well combined.
  3. Pour filling into pre-baked tartlet shells and bake for 20-25 minutes until set. Let cool, dust with powdered sugar, and serve chilled.
