For the Crust:

  • 1 cup diced tomatoes
  • 1/4 cup chopped fresh basil
  • 1 clove garlic, minced
  • 1 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Bread slices or crackers for serving

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the tomatoes, basil, garlic, salt, pepper, and olive oil.
  3. In a baking dish, layer the ricotta cheese, mozzarella cheese, and parmesan cheese. Spread the tomato mixture evenly on top.
  4. Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and lightly golden brown.
  5. Serve warm with sliced bread or crackers.
