Description

Tiny golden jewels — crisp on the outside, soft within, filled with bright lemon cream. Each bite is like capturing sunshine.


Ingredients

For the Crust:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup lemon curd
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, mix milk, egg, and vanilla. Gradually stir into dry ingredients until smooth.
  3. Heat oil in a deep pan to 350°F (175°C). Drop teaspoon-sized balls of batter into the oil and fry until golden, about 2-3 minutes. Drain on paper towels.
  4. Once cooled slightly, use a piping bag to inject each fritter with lemon curd.
  5. Dust with powdered sugar and serve warm.

Notes

You can customize the seasonings to taste.
