For the Crust:
- 1 sheet frozen puff pastry, thawed
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes
- Salt and black pepper to taste
- 4 ounces burrata cheese
- Fresh basil leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out puff pastry on a lightly floured surface to about 1/4-inch thickness. Cut into 4 equal squares and place on the baking sheet. Prick each square with a fork.
- Bake for 15-20 minutes until golden brown and puffed. Let cool slightly.
- While pastry bakes, heat olive oil in a skillet over medium heat. Add cherry tomatoes, garlic, and red pepper flakes. Cook for 5 minutes until tomatoes soften.
- Stir in balsamic vinegar, honey, salt, and black pepper. Simmer for 10 minutes until mixture thickens into a jam-like consistency.
- Top each puff pastry square with tomato jam, torn burrata pieces, and fresh basil. Serve warm.
