For the Crust:
- 1 cup mixed dried fruit (raisins, currants, chopped dates)
- 1/2 cup unsalted butter
- 1 cup water
- 3/4 cup brown sugar
- 1 tsp mixed spice (cinnamon, nutmeg, allspice)
- 1 egg, beaten
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- Pinch of salt
Instructions
1. Prepare the Crust:
- In a saucepan, combine dried fruit, butter, water, brown sugar, and mixed spice. Bring to a boil, then simmer for 5 minutes. Remove from heat and let cool for 15 minutes.
- Preheat oven to 325°F (160°C). Grease and line a loaf pan with parchment paper.
- Stir beaten egg into the cooled fruit mixture. Sift together flour, baking soda, and salt, then fold into the wet ingredients until just combined.
- Pour batter into the prepared pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
