Description

A moist and rich fruit cake made by boiling dried fruits with butter and spices, resulting in a deeply flavorful and tender dessert perfect for holidays or special occasions.

For the Crust:

  • 1 cup mixed dried fruit (raisins, currants, chopped dates)
  • 1/2 cup unsalted butter
  • 1 cup water
  • 3/4 cup brown sugar
  • 1 tsp mixed spice (cinnamon, nutmeg, allspice)
  • 1 egg, beaten
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. In a saucepan, combine dried fruit, butter, water, brown sugar, and mixed spice. Bring to a boil, then simmer for 5 minutes. Remove from heat and let cool for 15 minutes.
  2. Preheat oven to 325°F (160°C). Grease and line a loaf pan with parchment paper.
  3. Stir beaten egg into the cooled fruit mixture. Sift together flour, baking soda, and salt, then fold into the wet ingredients until just combined.
  4. Pour batter into the prepared pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  5. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
