For the Crust:
- 1 sheet puff pastry, thawed
- 2 cups mixed mushrooms, sliced
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp fresh thyme leaves
- 4 oz brie cheese, sliced
- 1 tbsp truffle oil
- 1 egg, beaten (for egg wash)
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Heat olive oil in a pan over medium heat. Add mushrooms and cook until softened, about 5 minutes. Add garlic, thyme, salt, and pepper; cook for another 2 minutes. Remove from heat and stir in truffle oil.
- Roll out puff pastry into a rectangle. Spread mushroom mixture evenly over the pastry, leaving a 1-inch border. Arrange brie slices on top.
- Roll the pastry tightly from the long side, sealing the edge with egg wash. Place seam-side down on the baking sheet. Brush the top with egg wash.
- Bake for 20-25 minutes, until golden brown. Let cool for 5 minutes before slicing and serving.
