For the Crust:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 cups cooked white rice
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, julienned
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
1. Prepare the Crust:
- Heat vegetable oil in a large wok or skillet over high heat.
- Add chicken pieces and stir-fry until cooked through, about 5-7 minutes. Remove and set aside.
- In the same pan, add garlic and ginger, stir for 30 seconds until fragrant.
- Add bell pepper, broccoli, and carrot, stir-fry for 4-5 minutes until crisp-tender.
- Return chicken to the pan, then add soy sauce, oyster sauce, and sesame oil. Toss to coat and heat through.
- Serve the stir-fry over cooked rice, garnished with sliced green onions.
