For the Crust:

  • 2 boneless, skinless chicken breasts, cubed
  • 1 cup sliced cremini mushrooms
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook until browned, about 6-8 minutes. Remove and set aside.
  2. In the same skillet, add onion and mushrooms. Cook until softened, about 5 minutes. Stir in garlic and thyme, cooking for 1 minute until fragrant.
  3. Add rice to the skillet, stirring to coat. Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes until rice is tender.
  4. Return chicken to the skillet. Stir in heavy cream and simmer for 3-5 minutes until heated through and creamy. Adjust seasoning with salt and pepper.
  5. Serve hot, garnished with fresh parsley.
