For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 1 package (20 oz) cheese tortellini
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 tsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Cook tortellini according to package instructions, then drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 6-8 minutes.
- Add minced garlic to the skillet and sauté for 1 minute until fragrant.
- Pour in heavy cream and chicken broth, stirring to combine. Bring to a simmer.
- Stir in Parmesan cheese, Italian seasoning, salt, and pepper. Cook until sauce thickens slightly, about 3-4 minutes.
- Add cooked tortellini to the skillet and toss to coat in the sauce. Garnish with fresh parsley before serving.
