For the Crust:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 3 cloves garlic, minced
- 1 small onion, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp baking soda
- 2 tbsp all-purpose flour
- Salt and pepper to taste
- 1/2 cup hummus
- 1/2 cup crumbled feta cheese
- 2 cups mixed greens
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 2 tbsp olive oil
- Lemon wedges for serving
Instructions
1. Prepare the Crust:
- In a food processor, combine chickpeas, parsley, cilantro, garlic, onion, cumin, coriander, baking soda, flour, salt, and pepper. Pulse until mixture is coarse and holds together when pressed.
- Form the mixture into small patties, about 1.5 inches in diameter.
- Heat olive oil in a skillet over medium heat. Cook falafel patties for 3-4 minutes per side, until golden brown and crispy.
- Assemble bowls by dividing mixed greens, cucumber, cherry tomatoes, and red onion among four bowls.
- Top each bowl with falafel, a dollop of hummus, and crumbled feta cheese.
- Serve immediately with lemon wedges on the side.
