For the Crust:

  • 1 lb boneless, skinless chicken thighs, cut into strips
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 cup basmati rice, cooked
  • 1 large avocado, sliced
  • 1/2 cup tzatziki sauce
  • 1/2 red onion, thinly sliced
  • 1/4 cup red wine vinegar
  • 1 tsp sugar
  • Fresh dill for garnish

Instructions

1. Prepare the Crust:

  1. In a bowl, toss chicken strips with olive oil, oregano, garlic powder, paprika, salt, and pepper. Let marinate for 10 minutes.
  2. Heat a skillet over medium-high heat and cook chicken for 6-8 minutes, until browned and cooked through.
  3. While chicken cooks, combine red onion, red wine vinegar, and sugar in a small bowl. Let sit for 10 minutes to pickle.
  4. Assemble bowls: divide cooked rice among four bowls, top with chicken, avocado slices, pickled onions, and a dollop of tzatziki.
  5. Garnish with fresh dill and serve immediately.
