For the Crust:

  • 8 chicken drumsticks
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • 2 bell peppers, sliced
  • 1 red onion, sliced
  • 2 zucchinis, sliced
  • 2 ripe avocados
  • 1 lime, juiced
  • 1/4 cup chopped cilantro
  • 1 small tomato, diced
  • 1/4 cup diced red onion

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss chicken drumsticks with olive oil, paprika, garlic powder, onion powder, cumin, salt, and pepper.
  3. Arrange seasoned drumsticks on a baking sheet and surround with bell peppers, red onion, and zucchini slices.
  4. Roast for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
  5. While chicken is roasting, mash avocados in a bowl and mix in lime juice, cilantro, tomato, and diced red onion to make the guacamole.
  6. Serve the roasted chicken and vegetables with a side of guacamole.
