For the Crust:

  • 1 lb ground lamb or beef
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh mint, chopped
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1 tsp lemon zest
  • 1/4 cup water
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine ground meat, breadcrumbs, egg, red onion, garlic, dill, mint, oregano, salt, and pepper. Mix gently until just combined.
  2. Shape the mixture into 1-inch meatballs, placing them on a plate.
  3. Heat olive oil in a large skillet over medium heat. Add meatballs and cook until browned on all sides, about 5-7 minutes.
  4. Pour in chicken broth, lemon juice, lemon zest, and water. Bring to a simmer, then reduce heat to low. Cover and cook for 15-20 minutes, until meatballs are cooked through and sauce has slightly thickened.
  5. Garnish with fresh parsley and serve warm with rice, pita, or a Greek salad.
