For the Crust:
- 1 sheet frozen puff pastry, thawed
- 2 large leeks, white and light green parts only, thinly sliced
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon fresh thyme leaves
- Salt and black pepper to taste
- 4 ounces brie cheese, rind removed and cut into small pieces
- 1 tablespoon honey (optional, for drizzling)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a skillet over medium heat, melt butter with olive oil. Add leeks and thyme, season with salt and pepper. Cook, stirring occasionally, until leeks are soft and caramelized, about 10-12 minutes. Remove from heat.
- Roll out puff pastry on a lightly floured surface to about 1/8-inch thickness. Cut into 4 equal squares or circles. Place on prepared baking sheet.
- Spoon caramelized leeks evenly over each pastry piece, leaving a small border around edges. Top with brie pieces.
- Bake for 15-20 minutes, until pastry is puffed and golden brown.
- Remove from oven, let cool slightly. Drizzle with honey if desired before serving.
