Description

These elegant individual tarts feature a golden, buttery puff pastry base topped with caramelized leeks and melted brie cheese, baked until flaky and delicious.

For the Crust:

  • 1 sheet frozen puff pastry, thawed
  • 2 large leeks, white and light green parts only, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper to taste
  • 4 ounces brie cheese, rind removed and cut into small pieces
  • 1 tablespoon honey (optional, for drizzling)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a skillet over medium heat, melt butter with olive oil. Add leeks and thyme, season with salt and pepper. Cook, stirring occasionally, until leeks are soft and caramelized, about 10-12 minutes. Remove from heat.
  3. Roll out puff pastry on a lightly floured surface to about 1/8-inch thickness. Cut into 4 equal squares or circles. Place on prepared baking sheet.
  4. Spoon caramelized leeks evenly over each pastry piece, leaving a small border around edges. Top with brie pieces.
  5. Bake for 15-20 minutes, until pastry is puffed and golden brown.
  6. Remove from oven, let cool slightly. Drizzle with honey if desired before serving.

Notes

You can customize the seasonings to taste.
