For the Crust:

  • 2 boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add diced chicken and cook until browned, about 5-7 minutes. Remove and set aside.
  2. In the same pot, add onion, carrots, and celery. Sauté until softened, about 5 minutes. Stir in garlic and cook for 1 minute until fragrant.
  3. Pour in chicken broth and bring to a boil. Reduce heat to low, add cooked chicken back to the pot, and simmer for 15 minutes.
  4. Stir in heavy cream, frozen peas, and dried thyme. Simmer for another 5 minutes until heated through. Season with salt and pepper.
  5. Ladle soup into bowls, garnish with fresh parsley, and serve warm.

Notes

You can customize the seasonings to taste.
