For the Crust:
- 1 sheet puff pastry, thawed
- 3 large yellow onions, thinly sliced
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tsp sugar
- 1 cup shredded Gruyere cheese
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Heat olive oil and butter in a large skillet over medium heat. Add onions, sugar, salt, and pepper. Cook, stirring occasionally, until onions are soft and caramelized, about 20 minutes. Stir in thyme.
- Roll out puff pastry into a large rectangle. Sprinkle half the cheese over the pastry, leaving a 1-inch border. Spread caramelized onions evenly over cheese.
- Starting from one long side, tightly roll the pastry into a log. Join the ends to form a wreath shape, sealing well.
- Brush the wreath with beaten egg and sprinkle remaining cheese on top. Bake for 25-30 minutes, until golden and puffed.
- Let cool slightly before slicing and serving warm.
