For the Crust:
- 2 cups low-fat cottage cheese
- 2 medium apples, peeled and diced
- 2 eggs
- 1/4 cup almond flour
- 2 tablespoons maple syrup or sugar-free sweetener
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and lightly grease a small baking dish.
- In a bowl, mix cottage cheese, eggs, almond flour, sweetener, cinnamon, vanilla, and salt until well combined.
- Fold in diced apples, then pour mixture into the prepared baking dish.
- Bake for 25-30 minutes, or until set and lightly golden on top.
- Let cool slightly before serving warm.
