For the Crust:
- 1 lb Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup fresh cranberries
- 1 medium apple, finely diced
- 2 tbsp honey
- 1 tbsp apple cider vinegar
- 1/4 cup shelled pistachios, roughly chopped
- 1/4 cup crumbled feta cheese
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and lightly browned.
- While Brussels sprouts roast, combine cranberries, apple, honey, and apple cider vinegar in a small saucepan. Cook over medium heat for 8-10 minutes, stirring occasionally, until cranberries burst and mixture thickens slightly.
- Transfer roasted Brussels sprouts to a serving dish. Top with cranberry-apple relish, then sprinkle with chopped pistachios and crumbled feta. Serve warm.
