Description

A vibrant and festive side dish featuring roasted Brussels sprouts topped with a sweet-tart cranberry-apple relish, crunchy pistachios, and creamy feta cheese.

For the Crust:

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup fresh cranberries
  • 1 medium apple, finely diced
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1/4 cup shelled pistachios, roughly chopped
  • 1/4 cup crumbled feta cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and lightly browned.
  2. While Brussels sprouts roast, combine cranberries, apple, honey, and apple cider vinegar in a small saucepan. Cook over medium heat for 8-10 minutes, stirring occasionally, until cranberries burst and mixture thickens slightly.
  3. Transfer roasted Brussels sprouts to a serving dish. Top with cranberry-apple relish, then sprinkle with chopped pistachios and crumbled feta. Serve warm.
