For the Crust:

  • 2 cups cottage cheese
  • 1 cup fresh strawberries, sliced
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup rolled oats
  • Cooking spray or butter for greasing

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and lightly grease four ramekins or muffin cups.
  2. In a bowl, mix cottage cheese, honey, vanilla extract, and cinnamon until well combined.
  3. Fold in sliced strawberries and rolled oats gently.
  4. Divide the mixture evenly among the prepared ramekins.
  5. Bake for 20-25 minutes, or until the tops are lightly golden and the cups are set.
  6. Let cool slightly before serving warm.
