For the Crust:
- 4 cups fresh corn kernels (about 4 ears)
- 1/2 cup crumbled feta cheese
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 lime, juiced and zested
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 2 cloves garlic, minced
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a large bowl, mix together corn, feta, mayonnaise, sour cream, lime juice, lime zest, chili powder, smoked paprika, cayenne, garlic, and cilantro. Season with salt and pepper.
- Transfer the mixture to an oven-safe baking dish and bake for 20-25 minutes until bubbly and lightly golden on top.
- Garnish with extra cilantro and lime wedges before serving with tortilla chips or crusty bread.
