For the Crust:
- 8 oz brie cheese, rind removed
- 1/2 cup heavy cream
- 1 head garlic, cloves peeled
- 1/2 cup olive oil
- 1/2 cup fig jam
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
- Crusty bread or crackers for serving
Instructions
1. Prepare the Crust:
- Preheat oven to 250°F. Place peeled garlic cloves in a small oven-safe dish, cover with olive oil, and roast for 1 hour until soft and golden. Let cool.
- In a food processor, combine brie and heavy cream. Blend until smooth and fluffy, about 2-3 minutes. Season with salt and pepper.
- Transfer whipped brie to a serving bowl. Top with garlic confit, a drizzle of the garlic-infused oil, and spoonfuls of fig jam. Garnish with thyme.
- Serve immediately with crusty bread or crackers.
