For the Crust:
- 1 cup full-fat cottage cheese
- 2 tablespoons honey
- 1/4 cup granulated sugar
- 2 tablespoons unsalted butter
- 1 tablespoon white miso paste
- 1/4 cup heavy cream
- 4 slices thick sourdough bread, toasted
- 1/4 teaspoon sea salt
- Fresh thyme leaves for garnish (optional)
Instructions
1. Prepare the Crust:
- In a food processor or blender, combine cottage cheese and honey. Blend until smooth and creamy, about 1-2 minutes. Set aside.
- In a small saucepan over medium heat, melt sugar, stirring occasionally until it turns into a deep amber caramel, about 5-7 minutes. Be careful not to burn.
- Reduce heat to low and whisk in butter until melted. Then whisk in miso paste until fully incorporated.
- Slowly pour in heavy cream while whisking continuously (mixture will bubble). Cook for another minute until smooth. Remove from heat and stir in sea salt.
- Spread whipped cottage cheese evenly on toasted sourdough slices. Drizzle generously with miso caramel sauce. Garnish with fresh thyme if desired. Serve immediately.
