For the Crust:
- 8 oz feta cheese, crumbled
- 4 oz cream cheese, softened
- 2 tbsp extra virgin olive oil
- 1 lb fresh strawberries, hulled and halved
- 2 tbsp honey
- 1 tsp balsamic vinegar
- 1/4 tsp black pepper
- Fresh mint leaves for garnish
- Crusty bread or crackers for serving
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss strawberries with honey and balsamic vinegar, then spread on a baking sheet. Roast for 15-20 minutes until soft and juicy.
- In a food processor, combine feta, cream cheese, and olive oil. Blend until smooth and creamy, scraping down sides as needed.
- Spread whipped feta on a serving plate, top with roasted strawberries and their juices, sprinkle with black pepper, and garnish with fresh mint. Serve with bread or crackers.
