Description

A creamy, tangy whipped feta dip topped with sweet, caramelized roasted strawberries, perfect for spreading on toast or as a unique appetizer.

For the Crust:

  • 8 oz feta cheese, crumbled
  • 4 oz cream cheese, softened
  • 2 tbsp Greek yogurt
  • 1 tbsp honey
  • 1 lb fresh strawberries, hulled and halved
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp fresh thyme leaves
  • Salt and black pepper to taste
  • Toasted baguette slices for serving

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss strawberries with olive oil, balsamic vinegar, thyme, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until softened and caramelized.
  2. In a food processor, combine feta, cream cheese, Greek yogurt, and honey. Blend until smooth and creamy, scraping down sides as needed.
  3. Spread the whipped feta on a serving plate, top with the roasted strawberries, and drizzle with any remaining pan juices. Serve immediately with toasted baguette slices.
