For the Crust:
- 8 oz feta cheese, crumbled
- 4 oz cream cheese, softened
- 2 tbsp Greek yogurt
- 1 tbsp honey
- 1 lb fresh strawberries, hulled and halved
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
- Toasted baguette slices for serving
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss strawberries with olive oil, balsamic vinegar, thyme, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until softened and caramelized.
- In a food processor, combine feta, cream cheese, Greek yogurt, and honey. Blend until smooth and creamy, scraping down sides as needed.
- Spread the whipped feta on a serving plate, top with the roasted strawberries, and drizzle with any remaining pan juices. Serve immediately with toasted baguette slices.
