For the Crust:
- 8 oz feta cheese, crumbled
- 4 oz cream cheese, softened
- 2 tbsp extra virgin olive oil
- 1 lb fresh strawberries, hulled and halved
- 2 tbsp honey
- 1 tbsp balsamic vinegar
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
- Toasted baguette slices or crackers for serving
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss strawberries with honey, balsamic vinegar, thyme, salt, and pepper on a baking sheet. Roast for 15-20 minutes until soft and juicy.
- While strawberries roast, combine feta, cream cheese, and olive oil in a food processor. Blend until smooth and creamy, scraping down sides as needed.
- Spread whipped feta on a serving plate. Top with roasted strawberries and their juices. Drizzle with extra honey and olive oil if desired, and serve with toasted baguette slices or crackers.
