For the Crust:
- 1 baguette, sliced into 1/2-inch rounds
- 8 oz feta cheese, crumbled
- 4 oz cream cheese, softened
- 2 tbsp extra virgin olive oil, plus more for drizzling
- 1 tbsp fresh lemon juice
- 1 clove garlic, minced
- 2 medium watermelon radishes, thinly sliced
- 2 tbsp fresh dill, chopped
- 2 tbsp fresh mint, chopped
- 2 tbsp honey
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet, brush lightly with olive oil, and toast for 8-10 minutes until golden and crisp.
- In a food processor, combine feta, cream cheese, 2 tbsp olive oil, lemon juice, and garlic. Blend until smooth and creamy, about 2-3 minutes. Season with salt and pepper to taste.
- Spread a generous layer of whipped feta onto each toasted baguette slice. Top with a slice of watermelon radish, sprinkle with dill and mint, and finish with a drizzle of honey. Serve immediately.
